Ideal home proofer for smaller batches.
So far these have been a excellent choice for proofing pizza dough at home. I didn't want a larger rectangular big box that could hold several since space is a concerning in the refrigerator, and these can be stacked easily out of the way making these very functional for home use.I've used them so far for dough balls between 330-360grams and have not had any issues with dough rising out of the container or being close to pushing the top off during proofing. I think they can do 400g dough balls and maybe a bit more depending on hydration/gluten/yeast amounts. The structure is what I'll call "soft rigidity" to it, study enough and is not falling apart and caving in on it's self, and the lids are very sturdy and the unit seals very well. No issues with sticking, a little olive oil coating before hand does wonders, along with a good plastic dough knife and letting the dough just release without trying to force it a lot. Even without a coating of olive oil I have not had a mess that's remotely close to difficult to clean up, if you do then it's operator error.I do agree with the one review that wished there was larger than 1L size offered, maybe 1.5-2L in the future is a idea for the manufacturer to explore. I'll try to update after 90days and 6 months if I remember.
