When I first saw this 2-piece butcher knife set, I was immediately attracted to the aesthetically pleasing design. For starters, both knives feature a solid wood handle that’s been crafted with a warm golden tone, and highlighted with a series of concentric black rings that add a dimension of depth. Although there’s no mention of a clear coat finish in the listing description, the handles are smooth to the touch and shiny to the eye, as if sealed. Whatever the finish, the handles seem to be sufficiently smooth to provide a level of protection against moisture. This should aid keeping the handles in top condition.Holding the knives in my hand is a real pleasure. I can best describe the experience as comfortable and secure, thanks to the generous width of the handle and the gentle finger grooves that run the length of the handle. Although both knives have a balanced feel, the weight distribution is definitely blade-forward. This is most pronounced with the brisket knife, due to the large size of the blade. Still, both knives display good blade control.Moving forward to the working end of the knives, the blades are advertised to be hand forged using high carbon 5Cr15MoV stainless steel. This grade of metal offers above average hardness and good edge retention. Both blades have a V-shaped edge with a narrow profile (~15 degrees), properties that promote sharpness. Indeed, the knives that I received were sharp out of the box, cutting through paper with ease and leaving clean edges behind. However, of the two, the boning knife was exceptionally sharp. In fact, I would characterize it as “razor blade” sharp. Taking a closer look at the cutting edge of the two knives, I noticed that the boning knife is wider compared to the brisket knife (see pics). This could be due to differences in the cutting edge thickness that I measured; 0.7mm (boning) vs 0.4mm (brisk).One of the most noticeable features of the blades in this knife set is the blackened surface opposite the cutting edge. This area is textured with thin horizontal grooves, extending from the spine inwards towards the mid-section of the blade. But to varying degrees, depending on the blade. For example, with the boning knife, the textured area is less prominent, extending only about one-quarter of the blade width. In contrast, the brisket blade has a textured surface that extends over one-half of the width. I’m not sure if this unique feature was added just for decoration, or if there’s a functional element at work here. If there is, I would guess that the blackened textured surface was added to keep meat from sticking to the blade.Although the shape of the blades couldn’t be more different, they are in fact ideal for their intended use. For example, when carving large cuts of meat, the best knife is one that has a long blade for guidance, a narrow blade that minimizes friction, and a thin cutting edge for control. That sounds exactly like the brisket knife in this set. In a similar but different way, the boning knife, with its sharp tip and slender profile, is the knife of choice for digging into joints and severing tough connective tissue. However, because of the versatile design, the boning knife will always find other uses, including a role as an all-around, go-to utility knife. Bottom line, the brisket knife and boning knife that are included in this set should complement one another quite nicely in the kitchen.👍 RECOMMENDATION 👍At the time of order, this 2-piece butcher knife set was selling for $39.99 with a 40% off coupon. Their design, craftsmanship, and performance exceeded my expectations.
I recently received a set of Naitesen kitchen knives. As someone who enjoys cooking and values high-quality blades, I was eager to put them to the test. With Naitesen’s hand-forged craftsmanship and high-carbon stainless steel, I wanted to see if they truly lived up to their reputation.These knives are hand-forged from 5Cr15MoV steel, known for its balance of corrosion resistance and ease of sharpening. The blades are sharpened to a razor-sharp 15-degree edge which also enhances its cutting strength and edge retention. Forged with a full tang construction, the wood handles are securely fastened by three solid rivets, ensuring durability, and ease of handling.They are VERY sharp right out of the box!A hardness of 56+ HRC means the steel is moderately hard, balancing edge retention and toughness. While it won’t hold an edge as long as premium steels, it’s easy to sharpen and resistant to rust, making it ideal for kitchen use. And that is what I want.I did cut up an eye-of-round roast into jerky strips with the carving knife. The knife had an easy feel to it and cut the thin strips very nicely. I didn’t have to stop and sharpen the knife as I would have with our older kitchen knives. I also tested both knives by cutting paper and then cheese, and they performed exceptionally well, cutting through effortlessly with minimal pressure.Both knives appear to be well crafted with a good grip and nice weight. The Carving knife has a 10-inch blade, and tends to be tip heavy, while the boning knife has a 6 ½ inch blade and is heavier on the tang. I like the forward-heavy balance of the carving knife, as it gives me a natural feel for precision slicing. However, some may find the tip weight makes control slightly more challenging. On the other hand, the boning knife’s weight distribution toward the tang provides excellent maneuverability, allowing for more controlled cuts.Overall, I am highly satisfied with these knives—their design, craftsmanship, and performance exceeded my expectations. For anyone seeking a well-balanced, razor-sharp set, these are a fantastic value and truly hard to beat in quality at the price.

The blades have a curious appearance perhaps engineered to suggest a rugged "hand made" veneer, as if pulled straight out of the blacksmiths bucket.
