I generally use a sharpening steel to keep knives up to snuff, but even with that, you need to sharpen them on stones with various levels of abrasives. The old was was to pull out the manual kit and do it by hand. This is much faster, convenient, and gives better results. This system guarantees that there is even application on each side. The polishing feature is nice as well. I find that three times on each side works well. Worth the expense.
