Simple enough to use, sturdy and it works
I have the KitchenAid mixer pasta attachments but I sometimes cook elsewhere and lugging the mixer is a drag. So I bought this little pasta maker for when I take the pasta show on the road. It works pretty well. You have to secure it to a counter pretty well. It may work itself loose over the course of preparing the pasta but that’s easily fixed. It takes a little trial and error to get the speed of the crank right. I found that a consistent speed was the best way to go. I did find that it is sometimes a little tricky to get the thicker dough to get started into the feed when you’re first flattening your dough on settings 1, 2, 3 and the like. But you’ll get the hang of it. Sometimes you have to push it in a little yourself or flatten the edge of the dough a little more than you would if you were using a mixer attachment. I made lobster raviolis with this machine and they turned out well. For long, thin, wide sheets of pasta, it is helpful to have a second set of hands as you really need to hold the pasta sheet with one hand, crank with another hand and guide the pressed sheet out of the machine. You can do it without help, but you have to be careful with stopping and starting with the crank as I found it can stress the pasta sheet. If you’ve made pasta, you know that eventually the dough starts to get less pliable as time goes by. I found I needed to add more flour to the pasta and I would sprinkle a little on the machine feed too to help keep the sheets from sticking or grabbing and then tearing and sending me back to settings 1, 2 or 3. Again, that’s the art of making pasta. So, for $35 or so, this is a good, portable machine that does the job. At the thicker settings, it can require a little elbow grease but the machine stood up to some real torque when I was cranking. I’m happy with the purchase. I will certainly be using this again.
