Excellent Chef's Knife
After using this knife in my home kitchen for a little over two months I am impressed. It was razor sharp right out of the box and is capable of making paper-thin tomato slices. Edge retention is very good. After two months of daily use it barely needed a touch-up and I've done a LOT with it. Meat, poultry, dicing veggies, opening food packaging, etc... it's now my kitchen workhorse and go-to knife for most cooking tasks. The balance is spot-on. It balances perfectly right in the center of the bolster, which is what you want. As with any quality knife the best practice is to hand wash and dry it after every use. The steel is described as a "high carbon stainless" and I believe this to be true since it holds an edge so well and has shown no signs of corrosion or water staining anywhere. The laminate handle is durable, comfortable, and easy to index when cutting. Fit & finish is very good overall but I have to dock a star for QC on this one unfortunately. There is a gap in the laminate handle (pictured). The gap was fairly deep but I was able to fill it with epoxy and sand smooth. If left unaddressed it's a potential bacteria trap.Overall: Highly recommended. This knife outstanding despite my minor issue. I think it's well worth the listed price.

Well made, attractive, sturdy, balanced, and sharp. What else do you need in a knife?
Very nice, very sharp knife. I ordered this for my cabin, and finally used it to mince garlic last night. Yes, a paring knife would have been better, but this sliced through the garlic heads beautifully and then I could do that chopping technique where you just move the knife back and forth over the pile of garlic to get it minced small. Big upgrade from the old set I’ve been using here. It’s a very attractive knife, has a good weight, and feel balanced and good in my hand. I’ve got Wustoff and Zwilling knives at home, some are over 40 years old, and while I’m not a knife aficionado, I do cook from scratch 5+ times a week, so I need decent knives. Also while this is sharp, I managed not to cut myself whereas another new knife I have at home somehow cuts me and my adult son almost every time we use or wash it. Good knife, good value. I’m going to hide it in the nice box it comes in so our renters don’t trash it, or “borrow” it. Seems well made and sturdy, with a comfortable grip. For those who commented about the lack of a sheath, I just cut a rectangular sleeve out of thin cardboard, like a cereal box, and use a rubber band or plastic clip to secure it. I suppose I could glue the top and one end together as well. I also have one of those flat wood knife racks that fits in a drawer, readily available at Target.

Gorgeous handle that is ergonomically correct
This Knife is gorgeous and works spectacularly well. It is very sharp and has a beautiful wood handle that is comfortable in your hand. The size is perfect for cutting all things such as raw and cooked meat, veggies and whatever else you may want to cut up. The knife is professional (which I am not a professional cook but still love it!) and stored in a specially made box for safety. The blade material runs through the handle and will NOT break when used. The blade is easy to clean and even though I am not a professional, think this knife is good value for your money. You will love the beauty and use of this knife.

Sharp, Balanced Santoku Knife That Delivers on Performance
I picked up this Merken Santoku knife to add to my kitchen collection, and it’s proven to be a solid performer right out of the box. I’m giving it five stars because it checks all the boxes for what I need in an everyday kitchen knife. The sharpness is immediately noticeable. From the first use, this knife sliced through vegetables effortlessly. Whether I’m chopping onions, dicing peppers, or slicing tomatoes, the blade cuts cleanly without crushing or tearing. It handles meat and poultry just as well, making quick work of chicken breasts and beef with smooth, precise cuts. The balance on this knife is spot on. It’s not too light where it feels flimsy, and not too heavy where it becomes tiring to use. The pakkawood handle feels substantial in hand and provides a secure, comfortable grip. Even during longer food prep sessions, there’s no hand fatigue. The full tang construction gives it that solid, well built feel that inspires confidence when you’re working through ingredients.Build quality is excellent. The blade has a nice satin finish that looks clean and professional, and the wood grain pattern on the handle adds a touch of elegance. The knife came packaged in a premium gift box, which makes it presentation ready if you’re thinking of giving it as a gift to a cooking enthusiast or someone setting up a new kitchen.I’m primarily using this for vegetable prep, which is where a Santoku really shines, but it’s versatile enough to handle meat and poultry when needed. The 7 inch blade length is perfect for most kitchen tasks without being unwieldy. The high carbon stainless steel blade is easy to clean and maintains its edge well. For the quality and performance you’re getting, this is an excellent value. Whether you’re upgrading your knife collection or looking for a reliable all purpose kitchen knife, this Santoku delivers. Highly recommended.
