Exquisite piece of cookware that will make your meal sing!
Whoa…I mean, whoa!! This pan is legit! I LOVE to cook, but I usually only cook for myself so I do not have a lot of pots and pans and the ones that I do have are not very large because frankly I don’t cook large portions that would require larger cookware, so finding a 10” pan like this was kind of serendipitous. As soon as I opened the packaging, I could tell that I hit the jackpot. This pan is just stunning…it may sound strange to describe a pan as stunning, but I am telling you, for a piece of cookware, it is just beautiful and almost makes you feel guilty for cooking on it. I tend to make different stir fry dishes quite a bit, so that makes this pan even more perfect…having used stainless steel cookware before I know how important it is to pre-heat and oil the pan prior to cooking, and by pre-heating, I mean setting the temperature to medium heat for a few minutes then adding your oil. Many will bark at the idea of adding oil for fear it will change the taste of the food they are cooking, but if you use an oil like canola oil that doesn’t have a taste or is more neutral, it really doesn’t change the flavor, but it does create a protective barrier for your cookware and it has a high smoke point, meaning that you can heat it to higher temperatures to prevent burning the food you are cooking. With this pan I would absolutely recommend using canola oil before cooking, especially if you plan to cook foods that tend to be a bit stickier, like eggs…after heating the pan, swirling a drop of canola oil around the base of the pan and waiting for it to heat up (until the oil looks like it’s glistening) then putting your eggs in, will help prevent any potential egg residue that might otherwise get stuck to the pan. If you still have residue left behind from your eggs or other food that you have cooked, DO NOT USE A SCRUBBING SPONGE OR BRUSH, it will scratch the pan and eventually ruin it. The best way to clean this pan if there is a remaining residue is to use a mixture of baking soda and boiling water, there is also a product designed for cleaning stainless steel cookware…I am not sure if I can mention it by brand name, but if you do a search online for how to clean stainless steel pans you will find a bunch of different methods on how to properly clean this pan. I have already cooked several different dishes using this pan and each time, the food has cooked evenly and tasted great. I have also used this pan in the oven at 425 degrees to oven finish a ribeye steak and it cooked the steak to a near perfect medium-rare temperature. The handle obviously gets hot when used in the oven, but does not when used to cook on the stovetop. I am telling you, this pan is just phenomenal and I love it! The price may seem high, but what you are getting is a top of the line frying pan that is versatile, incredibly durable, beautiful, made extremely well, easy to clean, safe and an excellent piece of cookware for your cooking needs. If this were a set, I would buy every piece!

Professional-grade and highly functional
I've been looking for a versatile pan that could handle everyday cooking with the ability to tackle more technical tasks. To my delight, this pan seems to be great for both. The pan is incredibly well constructed with a substantial and heavy feel. It heats evenly with no hot spots - which makes it great for everything from searing meat to caramelizing vegetables. It is also very responsive with its heat dispersion so when you lower the heat, the ramp down time is much quicker than cheaper pans I've used.Also very notable is the handle - which is clearly inspired by French cookware. It is flat, comfortable to hold, and stays relatively cool to touch - making it easy to pan toss or flip food. At 10", the size is very functional - large enough for a couple of steaks or a generous saute, but not so big that it's heavy or awkward.It's important to remember that this is a professional-style pan - fully stainless steel with no nonstick coating. This may make cooking with it a little more technical for the casual chef. Preheating to the proper temperature with butter or oil is going to be a critical step to keep your food from sticking. Similarly, clean-up will take some care as well.Overall, I feel this is a pretty solid choice for anyone looking to invest in a skillet that can deliver professional results. There might be a bit of a learning curve, but once you get comfortable with it, the performance and control make it worthwhile.

Wonderful to cook with and made in the USA
This is a very well made stainless steel pan and I've been particular pleased with my uses of this pan for sautéing. It's lightweight compared to others I've used and I have found it easy to clean up with a good (non scratch) sponge.I have been, over time, eliminating my teflon pans in favor or good ole stainless steel like this and this is a perfect addition to my cookware.I like that it's made in the USA too but perhaps because of that, it's kinda pricey. I've gotten a similar sized stainless pan (that wasn't made in the USA) that also came with a nice glass lid and it was a quarter of the price. But I wanted to try this one. The idea that it came with the backing of a famous chef didn't hurt either but then ... let's be honest, I had to google Daniel Boulud. He's not wrong, it's a good pan!
