Listen. To everyone saying these arent real Damascus steel and are laser etched, you are absolutely wrong. Using a microscope and acid test reveals that it is indeed Damascus and not etched. I do not know how they are selling true Damascus for so cheap. 60 to 70 dollars for a Damascus VG10 is really good pricing. Now onto the issues.People saying these chip obviously did not read the booklet that came with the knives. They specifically say do not use them kn frozen meat or bone. So, dont do that and it wont chip. Simple.Do NOT put these in the dishwasher. These arent the kind of knives you can be lazy about cleaning. You need to clean them by hand and then dry them with a towel. Its written in the booklet in big script. So dont be lazy and actually wash them. It takes less than 1 minute of your time people.Anything dropped risks being broken. Drop them and you can break the handle. Seems pretty standard. These knives are quite large. I recommend buying the beautiful epoxy cutting board from SenKen to store them. My current magnetic epoxy holder is too small and I will be buying their version (which is far more beautiful anyways).Listen. These knives are not restaurant knives. Stop taking them to restaurants. You need different ones in a restaurant due to the sheer workload. These knives are absolutely stunning. Take care of them and they will last for a long time.People really need to stop expecting indestructible knives for 70 dollar pricing. There is a reason chef's buy butcher knives that cost 200 dollars or more. These are NOT those knives. THESE knives are to make your kitchen look bougie at middle class pricing.I generally only leave reviews when the product is astounding or the reviews are from people who haven't figured out some simple things.Care for these knives is simple. They are deadly sharp.Don't sharpen these if you dont know how to sharpen. Take them to someone who DOES know how to sharpen. If you are trying to cut frozen meat or bone or using in a restaurant, get different knives.
These are exceptional quality knives. The handle is very comfortable and the blades are very sharp. These are NOT laser etched as one review claimed. They are true Damascus style blades. But only their tsunami line is Damascus. The other lines are laser etched, as they state. There is no deception. Would definitely recommend if you can’t afford shun knives.
Arrived on time and looks good
Incredible knives. They are stunningly crafted and made cutting a sandwich in half a memorable experience. Top quality and pretty to look at when displayed on a magnetic block.
I bought the Senken Tidal Wave knife set with the blue handles. They look great, both in the knife holder and out of it. I do believe that they are quality Damascus steel, and vg10 steel is quite good. Up until recently I have only used them in my home kitchen. I decided to put them to the test at a friend's restaurant. I tested the 10-in and the 8-in chefs two separate days. They each worked beautifully, while I cooked and cut up about 120 lb of chicken and beef each day. I have a honing rod which I used occasionally to bring back the sharpness, and that worked very well. However, when I got home and examined the cutting edge of the 8-in chef knife, I noticed there were several nicks. While I was working with a knife it did not affect the cutting ability. Perhaps because of the hardness of the vg10 steel it is prone to chipping, and the 15° cutting edge is also a very fine edge, which may not take much abuse. The nicks are easy enough to work out on my wet stone, it's just not good to see that on a quality blade. The restaurant owner used the knife and said it was fantastic.Overall I am very pleased with the set, especially since it's main use from now on will be in my home kitchen. But be careful on Bones and anything that is frozen, to avoid chipping the blade.
These knives have been awesome. Razor sharp upon arrival and havent dulled a bit after a year of heavy use on all kinds of food.
