Just got it recently, I’d be very careful cleaning it with a sponge or a rag. The cut still stings. Sharp enough to cut through mostly anything. This SHAN ZU Means Business

After fifty years, I've handled my share of tools, and that includes plenty of kitchen knives. I recently got my hands on this SHAN ZU 8-inch chef knife, and I've got some thoughts on it.Right out of the gate, the thing that struck me most is how incredibly sharp this blade is. I'm talking seriously sharp. It went through vegetables for a stew I was making like they weren't even there. You barely need to apply pressure. It’s made from some Japanese high carbon stainless steel, and it certainly performs. The other big plus for me is the handle. This Pakkawood handle just fits my hand perfectly. It’s got a good heft to it, feels solid and comfortable, even when I’m doing a fair bit of chopping. It doesn’t slip, and it just feels right, giving good control over that wicked edge.Now, nothing's perfect. If I had to point out a downside, it’s that a knife this sharp demands your full attention. There's no room for careless handling here. You really need to respect the blade and know what you’re doing, which is fine by me – a good tool deserves that kind of attention. It also means I'm a bit more particular about keeping it dried and stored properly, but that’s just good practice with quality steel.So, yeah, I’m pretty pleased with this SHAN ZU knife. It feels like a proper piece of equipment, ready for some serious work in the kitchen. It's a solid performer.
