Sharp out of the box and well made. Handle is comfortable and ergonomic in the hand. Blade is high quality steel and matte finish that makes it look beautiful. Cuts precise and the thin blade is flexible about half way down and stiff the rest of the way. I got it on sale for $30 and think it’s a good bargain for the price. Knives tend to be a personal choice...weight, handle, spine, angle of blade, and bolster, and this knife fits everything for my preferences. I still use my carbon steel knives that I have used for 40 years but I wanted a knife that doesn't chemically react to acids, or brown produce.I have ordered and returned several knives in an attempt to find the perfect knife and this one was by far the least expensive one of the bunch.I have no concerns surrounding the quality seeing as it is manufactured by Shan Zu.All new Shan Zu knives are shipped nearly as sharp as a razor.The handle is pretty, and feels really comfortable. The weight of the knife is perfect. The flex of the knife is very good.If you are serious about using a quality knife without breaking the bank, this is the knife for you.I will update this review in a couple months.

A very good knife that performs above many in the $50 plus range is a big winner

A very good knife that performs above many in the $50 plus range is a big winner and worth a second look when considering a quality very sharp knife with good edge retention. The steel used in the knife blade as stated on the label on the presentation box is 10Cr15Mov, a value Chinese equivalent to the Japanese premium VG10 steel with great 60+ HRC hardness. That's what helps control the cost of this particular good knife and gives us the consumer a considerable saving for a good performing chef knife using simple japanese style san mai sandwiching steel technique on the edge for maximum results.   Granted, I gave the knife a four stars rating because my copy of the Shanzu knife did drag a bit on the paper cutting test that I've performed on an advertising flyer and a sheet of 8.5 x 11 inch white paper and unable to get a straight cut due to some minor edge burr along part of the edge. Knife edge burr can occasionally happen during the manufacturing edge sharpening process with industrial grinders. Otherwise this chef knife does everything just fine out performing my old cheap chef knife by leap and bound during weeks of use and not a dull moment. Great for cutting giant carrots and such vegetables but I forgot to wash the knife immediately which left some minor stain like beta carotene pigment on the knife. Some soft brush washing with Dawn took care of it afterward.    I highly recommend getting this Shanzu Okinawa series chef knife overall and a steal currently on Amazon with a coupon bringing down the dollar cost considerably. and worth a second look when considering a quality very sharp knife with good edge retention. It's the knife I keep coming back to

This has been my workhorse knife since I got it a few months ago. Super sharp out of the box, then stays sharp for a long time, and relatively easy to sharpen the couple of times I have needed to. Very comfortable handle, good weight and balance. I just like using it.The extra hard edge has not chipped, although I've never used it on anything with a bone. It is a vegetable cleaver after all.Very impressed with Shan Zu's quality. I've looked at upgrading to one of their fancier blades, but I really like the size, shape, and material of this handle. Plus, I guess I don't NEED another knife...
