These knives are absolutely beautiful and very sharp. The Japanese really know their craft when making these knives. I didn't need them, but had to have them.
I got these on sale to help with the sticker shock. I have been using them for a couple months now with no sharpening, only honing every few uses. Definitely hold an edge better than the German knives I’ve had for many years. Nice aesthetics as well.
I'm shocked how well made these knives are! Are they expensive? Oh very much so, but quality does have a price. Warning: They are RAZOR sharp! We'll see how well these will hold up. This is called a starter set, but for most people, I think these are all the knives you need. They are very sharp and well balanced. Be sure to read the care instructions and these knives will last you a long time. They are a bit pricey, but well worth the price if you do a lot of food prep.
Shun does it again with a great knife set. I have a decent amount of higher end knives so I have a good idea of what to expect. I have to say, I was a little surprised with this set. Even though they have great weight to the, they are lighter than some of my others. The lighter weight and Pakkawood handles shaped for comfort make these knives very nimble. I can easily use cut for a couple ours without any fatigue. With my heavier knives, my hands do get tired. The edges are sharp and they cut through the toughest vegetables with ease. Things like tomatoes, peppers and potatoes. The hammered texture keeps potatoes from sticking. If you've ever used a flat knife to cut thin potato strips, you know how frustrating sticking potatoes can be. The hardened steel will keep the blade edge sharp, just remember hard steels are more brittle, Don't drop the knife. Softer German metals don't chip as easily, but require sharpening more often. Many people mistaken sharpening from Honing. See these knives should only need to be sharpened 1 -2 times a year. For most home chefs, it would be once. But all knifes should be Honed before every use. Get a metal honing rod. Honing aligns the microscopic edges that bend out of place with use. When the edges are folded back in place with honing, the full sharpness returns. These knives also have a 16 degree edge, Don;t use those standard sharpeners, most are set for 20 degrees. I would send the set back to Shun for a free sharpening. For myself, using a high quality knife like this set brings enjoyment to cooking. These knives will last a lifetime and well worth the one time investment. After using so many different brands, I've always placed Shun at the top. My wife has found her favorite with this set.
I'm in 💕 love! Boy, are these babies sharp and just so beautiful. Love the handles and they are easy to grip and comfortable.I never had any knives this sharp out of the box. It really made a big difference when in the kitchen and saves so much time. I have cut vegetables and meat and they all were so easy to do. Tomatos for pico de Gallo. Onions, no crying! Cut and trimmed skirt steak like butter. Salmon skinning was a breeze. Did I say I'm in love? What am I gonna do with the 5 other chef knives now?Be very careful with your fingers please, my love and I are now blood ties. 💋🩸Make sure to read the instructions. These knives are not made to cut hard food as they can chip.
