They work very well as a replacement to parchment paper when baking sourdough, since it seems to be hard to find decently price parchment that is rated for 450°. Inexpensive, completely non-stick, no foul odors, and safe at 500F

I bake sourdough bread and these slings work exceeding well in my Dutch oven for baking boules (i.e. round artisan loaves). An unexpected bonus is that the bottom of the loaves don't get over-baked any more...they are nicely browned, chewy without being tough, and a little pliable. But best of all, baking at 475F without super expensive paper is awesome! I especially like that nothing sticks to these, though I still dust my dough before flipping onto these mats. :D
