Not bad!

This is a small (6 Q) attractive pressure cooker made of stainless steel and utilizing the traditional design which I will describe in a minute. The only reason this doesn't get 5 stars is because the underside of the lid and ot flange is a bit sharp and you can snag your skin as you close the lid if you aren't careful. Once you see what I mean, it isn't a hazard since you can avoid it but I think the seller ought to adjust that aspect of their design for safety's sake.Pressure cooking is probably the best way to cook beans, root vegetables and some cuts of meat. Pressure cooking allows you to cook with water substantially hotter than the boiling point (212 F or 100 C) and the additional pressure provided by the pot tenderizes and thoroughly cooks whatever you put in it very quickly. You can make chicken soup from scratch in an hour, any type of bean in about 30 minutes and many other dishes much quicker than an oven and much tastier than a microwave. It's not complicated and while some have a bit of trepidation because of the pressurization, it is quite safe. The pot has several pressure release valves and is built quite sturdily such that I have no reluctance to use it. I am a pressure cooker veteran with more than 30 years of experience and the owner of several different styles.This style is a very traditional one--a weighted cap rocks to let out steam once the pot comes to temperature and you will quickly be able to judge the goings on inside the pot by the tempo of the rocking and the pitch and smell of the steam escaping. There is a silicone gasket (and a spare is included) to seal the lid. A touch of vegetable oil after washing will keep the gasket fresh and pliant. In my experience, the only mishap that can occur is that the gasket is not seated properly and some water will escape the edges of the lid as the temp begins to rise. The solutionis to simply place the pot under cold running water for a minute to bring the temp down quickly, remove the lid and reseat the gasket properly.I am a devotee of this type of cooking--it extracts fantastic flavors from everything you put in it and is qualitatively better, in my opinion, than any other method for making soups and stews, beans, and winter veggies like squash, carrots and boniato. Meats like pot roast and even ribs become as tender as filet mignon when cooked this way and all that is left for you to do is brown it and sauce it.The pot is offered at a value price and is a great entry point for learning an entirely new way to cook.
