German style HRC 56 1.4116 -class knife. Kitchen, not EDC. Good young Scout first kitchen knife.
STARFISH Chef Knife, 6.0” Great Kitchen Knife with Leather Sheath for Home Cooking, Chopping. Olive Wooden Handle Japanese Style Forged Viking knives for Camping, BBQSmall chef's knife from STARFSH targetted for home kitchen and cooking. But no information on blade alloy or HRC. And contradictory information on if carbon steel or stainless. So I asked the seller and received this fast reply:YOUR CONVERSATION WITHPinGaoJan 22, 2026 3:54 AMWhat is the actual alloy used? Similar to Aogami or Shirogami? Composition? Edge HRC?Jan 22, 2026 6:50 AMThe material of blade is 440A steel.440A stainless steel is a high-carbon, martensitic steel known for hardness and wear resistance, primarily composed of Carbon (0.60-0.75%), Chromium (16.0-18.0%), Manganese (max 1.0%), Silicon (max 1.0%), Sulfur (max 0.03%), Phosphorus (max 0.04%), and Molybdenum (max 0.75%), with the rest being Iron. The Hardness approximately HRC 56."This was a dissappointment. STARfISH generally uses a far better EDC-typical alloy in their knives - DC53. While not stainless; DC53 is a true cold-work tool steel and much more alloyed for cutting performance than 440A:Typical composition:Carbon: ~1.0%Chromium: ~8%Molybdenum: ~2%Vanadium: ~0.3%Typical knife hardness:60–62 HRC (sometimes 63 with proper HT)Designed to be:Wear resistantStable at high hardnessTough for its hardnessLong edge lifeThis is totally in a different performance class than 440A:440A is the softest and most corrosion-resistant member of the 440 family.Typical composition:Carbon: 0.60–0.75%Chromium: 16–18%Molybdenum: up to ~0.75%Almost no vanadiumTypical knife hardness:54–56 HRC (sometimes 57 if pushed, rarely higher)It was designed to be:Very stainlessEasy to machineEasy to sharpenTough and forgivingNot designed to be:High edge retentionHigh performance“Japanese style carbon steel”It’s closer to Victorinox / medical scalpel steel than to any traditional Japanese blade steel.A real letdown on expectation for me. But as a Kitchen (not EDC) knife:5 stars - if Kitchen expectationsGerman style HRC 56 1.4116 -class alloy knife. Kitchen, not EDC typical. Good possible young Scout first real kitchen knife.Suggestion: There is at least one great use case: that is by a 10-12yo boy or girl scout who has recently completed - or about to complete their - knife safety training. The 6" length, combined with kid -friendly finger hole, makes it just right for their first 'real' non -toy good cutting kitchen knife.Final note : because i was disappointed that DC53 was not used, my review was a bit hard on 440A.It is a good mainstream stainless alloy for kitchen knives. Better than the cheaper more often used 420J2. Very close to German 1.4116 used by Victorinox, Wustof, etc.

Attractive, functional, shorty chef knife
With this knife actually in hand, it is much more attractive in person than the stock photos made it look. The blade is stamped as 440A steel, which is a good choice for kitchen steel. It’s not really a bushcraft or EDC knife steel. The description describes it as both a camping knife and kitchen chef knife; I think it leans much more towards the kitchen side, however it does have an outdoorsy style. The hammer marks and black section are either a love it or hate it thing, that’s what gives it its outdoorsy feel. I find that it’s rather nice in person. The olive handle is also delightful in person! The knife comes razer sharp and I was immediately able to zip right through some vegetables. While the sheath can be carried on a belt, it’s also perfectly good for keeping your knife safe in a kitchen drawer. It’s a good looking sheath, too.As far as chef knives go, 6” is rather short, but it fills a gap that most kitchen knife sets don’t have. You might have a santoku of similar size in your knife block, but that’s a much straighter edge than this chef knife, which is actually quite curved even for a chef knife. The starfish blade even comes to a slightly turned up point, which is not typical of a chef knife. It sort of does its own thing, chef knife might not even be quite the right term. The forward finger hole is also quite nice. You can hold the knife with a standard grip by the handle, or choke up and use the finger hole for extra stability and safety for your fingers. I would have like to see some jimping on the top of the knife, but in truth the finger hole accomplishes a similar goal. The finger hole also just makes the knife stand out as unique.I’m not sure that everyone really needs this type of knife, but if it’s caught your interest, buy with confidence.Ohh, and the price is right.

Stunning knife
I bought this chef knife and it's a beautiful knife. The craftsmanship and aesthetics are genuinely impressive—this looks like something you'd display, not just use.I know it looks rugged and the marketing suggests camping use, but with it being carbon steel, it really shouldn't be taken camping. Carbon steel requires more maintenance and care than stainless—it can rust if not properly dried and oiled. This is a kitchen knife that happens to have an outdoor aesthetic, not an actual camping knife. The leather sheath is nice quality, but it's not really necessary for a kitchen knife. In a kitchen setting, you're storing this in a drawer or on a magnetic strip, not carrying it around. The sheath feels more like a marketing gimmick to play up the "Viking camping knife" angle than a practical accessory. The olive wood handle is stunning and nicer than I was expecting. The grain is beautiful, and the craftsmanship on the handle is excellent. It feels comfortable in hand and looks premium. My main functional complaint: I don't love all the holes in the blade. They might look cool and rustic, but practically speaking, they're just more crevices to clean. Food gets stuck in them, and you have to pay extra attention when washing to get everything out.The full tang is great to have. It makes the knife feel sturdy and solid in your hand. The weight distribution is excellent, and you can tell this is a well-built tool.Recommended
