We picked this up mainly to try induction cooking before committing to replacing our gas range, and it ended up being a really good trial run.It heats very fast. Pans come up to temperature quickly, and when you adjust the heat, the change is immediate. That took a little recalibration coming from gas, but once you get used to it, it’s actually easier to control because the settings do what you expect instead of lagging behind.As expected with induction, the heat stays in the pan rather than the cooktop surface, which made cleanup easier and reduced the chance of accidentally touching a hot burner.
