Good quality, heats evenly without hot spots,
Now that I'm retired, I finally get to try all those delicious recipes I've collected over the years.Among them are a collection of tarts and quiches. I do have a tart pan, but it has been around for many, many years and is ready to retire. This set of 2 stainless steel tart pans are a great addition to my kitchen. At a bit more than 9 inches they are perfect for any recipe that feeds two (with a couple of grandkids thrown in to eat the leftovers).I did wash the pans before use with regular dishsoap and let them air dry. They are dishwasher safe, but I tend to wash by hand a lot. These pans are one piece and have a fluted, crimped edge. Unlike other tart pans, these do not have a removable bottom.I did make Pate Sucree for a fruit tart and used a piece of parchment paper for the bottom of the pan in one pan and just a bit of corn meal in the other. Stainless Steel tends to develop its non-stick feature over time, but I needn't have bothered with the paper because the crust slid right out of the pan that had only the corn meal in it. There were no hot spots and both my tart crusts heated evenly.I've also made a spinach/ricotta Fritatta that also came out beautifully.Having two of these means I can make dinner and desert in one go and I can also bake two pies at a time which saves time. The price of $16.99 is actually lower than I would expect to pay for two of these, so it's a win-win for me.
