Exactly as advertised! I am very pleased with both of the knives.
This knife is very sharp out of the box. It cuts food with little effort. I washed it well before use, but some of the blackened part of the knife rubbed off onto cheese. The sheath is good quality and it fits the knife nicely.
At this price point ($85.00) the knife should be sharper (would not shave arm hair) and hold it's edge. I have Wal-Mart knives that arrived sharper and took months to dull to the point this one did after only 10-15 mins of cutting up roasts. My level of disappointment on this purchase is unquantifiable.
If you wondered what a well-crafted, hand forged knife is like, here is not only your opportunity to see it, but to enjoy and appreciate it.I was quite pleasantly surprised at simply how much I love this knife. I didn't know if I would like the shape, the weight, the rock... Now I find I love them all, and more than some knives I have that are two to three times the cost.I wasn't sure if I had "room" in my use case for adding another knife, and yet this knife is making its own use case, carving out its own niche. Replacing, even, other knives in their roles.So, first, the knife is hefty. Weighty. Solid. It's a tank. This is no machines knife with the most minimum of steel necessary for standards. This item has weight to spare. This knife will likely last for quite a long while.Second, the blade is far more effective than it at first seems. My initial thought as I appraised the edge, was that I would want to sharpen it a good bit more. I was a little disappointed. Then, when I began using it as it was and is, I found it simply passing right through even some of the tougher of cuts of meat, with little to no effort. I was and am impressed.I consider it has to do with three things. The more than well sharpened edge. The weight of the knife and the incredibly smooth rocking motion of the blade's curve.This is my last highlight, the shape. I didn't know if I would really enjoy it, thinking it might require a bit more work on my part to elongate strokes and ensure the knife made good haft to tip contact throughout. Yet, for the weight and the balance, it rather "wants" to do the very thing it needs to do, and it does it very well. I don't even have to think about it.If I had to describe the simple, rough way of how this knife feels in my hand and while using it, it is as follows:Think of your favorite steakhouse steak knife. Big handle, oversized blade. Cuts beautifully. Enjoyable hand experience. Just feels warm and authentic. This knife feels just like that to me, but in the form of a fine, precision chef's style knife, with all of that additional advantage and competency.The overall build of this knife is genuine. It's a bit raw, and yet, to a true knife guy or gal, we love that. It's character. It's distinction. It's fun and it's quality. It's not Damascus steel forging, but it's got a real flavor that seems in the same ball park.I say well done, mates. Keep up the great work! You've added a full-time knife into my collection, and I am very pleased.Oh, and they really slather this up with oil for shipping, so do give it a good, solid workover before cutting, right?
This is a pretty good knife for the price. It is carbon steel, so you can't let it stay wet or it will rust. Just a quick wash after you are done and then dry. If you like to leave knives wet or covered in food this is not the knife for you.The hollow grind means when its sharpened this knife has a really sharp edge on the secondary bevel which slices super nicely.As you can see in the picture the edge came mostly nice, but it had some of the burr left. Likely sharpened on a belt of some kind. After a quick touch up sharpening on a diamond stone and then stropping It is shaving sharp and good to go. Edge retention is good, so they did not ruin the temper on the belt sharpening. This is the only reason its not a 5 star as it needed sharpening out of the box to make a clean edge.I do see the ad here says dishwasher safe which... maybe but again a high carbon steel should not stay wet, so if you are going to do that make sure to run a dry cycle. Still best to avoid that.The leather sheath is also nice. I am keeping this as mostly a fine slicer, so having it in my cabinet where the edge will not get damaged I know its in good shape.On storage again with being carbon steel waxing the blade with a food safe wax is advised.
I am sure that someone who's actually expert at the sort of thing could give a better demonstration of how sharp the knife is. I tried cutting a super thin piece of apple, and the only reason it isn't even more paper thin is because I'm not that skilled, not because of the knife.There are no care instructions in the box, but based on the website I would say that this is not rust resistant. That's not really what it's designed for. I have included a screenshot of the care instructions on their website. This is definitely a knife that you get if you intend to take good care of it.It will take me awhile to determine the edge retention and if I notice anything significant about that I will edit this review. So far it feels very comfortable to hold.The strap on the leather case for holding the knife in has a little swivel to it so you can move that out of the way when you're putting the knife in. I only mentioned that because I didn't notice that at first and momentarily had to complete putting it into the sheath. So that is a nice detail that they took into consideration.
I own several high-end kitchen knives and cook often. I liked the overall look of this Nikos Chef Knife and so I decided to give it a shot. After using it for a few months I can report that it is a solid knife, but a bit gimmicky int my opinion. I'm not certain it is really hand-forged, rather it looks like it is purposefully crafted to have small flaw to give it a handmade look. It cuts fine, but I have better knives. Weight and balance are OK. I feel like this belongs more in some outdoor cooking TikTok, than in a real kitchen. I have much better kitchen knives that cost about the same.
