OUTSTANDING SKILLET

We LOVE our WANGYUANJI Coating-Free Carbon Steel Flat Bottom 10.24 Inch Skillet! We ordered this a while ago but haven't gotten around to preparing it and using it until now. My son has more experience with these kinds of pans, he prepared it for us and used it and i have to say, I'm very impressed with it and its ability to evenly cook our chicken breasts.It is heavy-duty, but not heavy at all, no need to drag out your largest or heaviest pan to cook proteins for dinners. EXTREMELY well crafted of quality carbon steel, and the high heat tolerance makes for quick heat up and even heat distribution, no need to move it around while cooking. The This skillet is perfect for a wide variety of different foodslike our constant need to cook chicken, fried eggs, even omelets. The removable wooded handle is very elegant looking, adds a touch of beauty to it.We don't have to ruin one skillet in the kitchen, which we have heavily done in the past. The idea of not using the old scratched up "non-stick" (not anymore) is one i have waited for a long time. I don't have experience with the cost of this type of skillet but at less than $70.00, in my eyes is not overly expensive. Especially considering the projected longevity of it, i think it pays off in the end, if you do not have to replace it anytime soon.I am a fan of steel pans now, i would recommend trying it if you spend a lot of time, scrubbing and replacing old non-stick pans.

High maintenance

An attractive addition to the kitchen. The weight reeks of quality. One does have to keep up with maintenance by seasoning the pan regularly as one would a cast iron skillet as it is uncoated. It is also hand wash only, no soap. While I like the skillet a lot, the high maintenance forces me to claw it back from a 4-star to a 3-star, albeit others may not mind the high maintenance.

Prepare to Season

Well built pan. Love the sturdiness and the handle. First time using I definitely had a bunch of food stick so if you are expecting non-stick out of the box, you won't get it. Be prepared to season it well. Good news is, they included very specific instructions on how to do this. Happy cooking!

Not a traditional carbon steel fry pan

When people are looking for a carbon steel fry pan / skillet, they are going to be looking for something completely from this, generally speaking. When I think of a carbon steel skillet, I'm picturing something light, which you use a lot like a cast iron (except it's lighter, and doesn't have the same heat retention).This is heavy. It is exactly as described. It is carbon steel, in the same way a wok is carbon steel. The shape puts it squarely into frying pan. However, I wouldn't use it for what I normally use carbon steel. It's going to heat up much more slowly than my other carbon steel pans. This is more like a slightly lighter cast iron or an odd shaped wok. It has plenty of uses. It's just better for tasks that want heavier pans with heat retention - frying, sauteing, searing.I have no idea how the seasoning was when it came. I don't ever leave it to the manufacturer. I immediately put on my own seasoning. Make sure to use very hot oil. Let it get into those little divots before pouring it out. Coating is now slick enough to fry eggs. The hammer marks makes some tasks unlikely right now, but I think as I build seasoning, those marks might well go away.

What a deal! Great pan

I have had just about every pan available over the years and the value in this pan is worth every penny. The packaging came great and very safely packaged. The handle takes a few seconds to put on and fits like a glove and very comfortable. It is easy to tell right away that this is a good heavy weighted pans that is very well built and very durable.The instructions really stood out to me, they are very thorough and easy to understand on exactly the best way to season the pan as well as maintaining it after use. Once it is seasoned properly it is truly a nonstick surface and a breeze to cook with. Do make sure to follow the seasoning steps and read the instructions step by step, then make sure you follow the after use maintenance and you have a pan that rivals other that are three times the price. Overall I highly recommend this to any level cook out there.

Excellent hammered carbon steel pan

WOW, this pan is AWESOME! I have cooked everything from an omelet to stir fry and nothing has stuck, and nothing has burned. It's really impressive, honestly. It's become my new favorite pan. The pan is an excellent purchase for the price! It weighs a lot, like way more than I expected it to. My mother and I have had a couple of conversations about the dual uses of this pan, if the need ever arose ;) You know what I mean... You will have to season this pan, like you would cast iron, because it doesn't have a ceramic coating or anything like that on it. It does come preseasoned, which is why it's a dark color, but you do have to maintain it and you cannot use soap in this pan! You need to think along the lines of cast iron, when using this pan. If you maintain it with a good season, it will be a non-stick pan and last a long time. If you use soap or let it sit in water or put it int he dishwasher, you will ruin it...
