This knife is great!!! Cut the bread perfectly! Just be careful it is verySharp , I cut myself but I was in a hurry and it slipped. But this knife is prefect
It works, nothing special. Wish it was a tad sharper though
It’s so easy to use. You can even cut bread while it is still hot.
Out of the box this now looks about how you would expect. Hard to tell what kind of wood it’s made of but looks similar to what I’ve commonly called fruit wood but is generally some kind of Ash. Smooth finish on the bow and a nice sharp saw style blade. Blade is easily reversible for right or left handed use by removing and replacing 2 small screws. Comes right handed. Maybe a small learning curve as to where to start and stoke length depending on the width of your loaf. Was very pleasantly surprised and impressed by how thin I could cut some hard crust sourdough without much effort at all. This is an otherwise difficult task with even quality bread knives. My only wish is that the blade was offset at a 45 degree angle so the entire bow wasn’t flat to the cutting surface at the end of the cut. Comes d wed it’s a nice rubbery easy to use blade cover and a storage bag for safe clean stowing in a drawer. One of those items I thought I probably didn’t need and now probably can live out. We buy fresh sourdough every week and this tool has by far produced the best thin slices even after purchasing several higher quality long bread knives that didn’t really do the trick. I think the price is reasonable based on quality of materials, construction and the results achieved.My grading scaleMy ratings are based on one or more of the following characteristics. This is very flimsy and has a lot of play in it while cutting and one cannot keep from cutting the bread very skinny at the bottom! I would not recommend!!
I purchased this bow knife to slice my wife's homemade Sour dough breads. The bread typically has a thin, hard crispy crust with a soft interior. The bottom surface can vary and in some loafs can be pretty tough. Then there are times we add inclusions i.e. Raisins, nuts, olives, Jalapeno peppers, blue berries, fruit even meat.I own two bow knives including this one and have given away one other. Bow knives are made to cut soft materials like bread. They have a thin wavey shaped cutting blade that is also short in height. (Note: the blade on this handle can be reversed to accommodate Left hand use – Unusual!)The wavey blade cuts the soft but resilient bread with minimal tearing. The pointed teeth on the blade work perfectly for cutting through the crispy crust. While the thin, short height blade passes through top to bottom with the least resistance to prevent compressing the loaf.The thin blades and short height explain why these outperform, the heavy serrated knives I have in my knife block.Importantly The knife here had no problem with the inclusions noted above.The wooden handle on this knife is the lightest weight of the 3 I've used. It's made from beach wood. The other two are bamboo and Oak – all 3 work great. These knives are usually used for short periods and with minimal force, so it doesn’t have to be big and heavy with a robust handle. This knife feels good in the hand very controllable. Although I wish they rounded the handle area a little more maybe laminating the handle area to provide thickness.All 3 have a similar shaped bow area. But the depth of the open bow can vary. The depth of the bow limits how thick a slice you can make. This particular bow is 2 1/8" across. A pretty thick slice and enough even for a big bagel.The blades typically provide 9-10" of free or open cut length. This limits how wide a loaf you can cut. We cook our sour dough in a Dutch oven, so the loaves are normally a little less the 9" in diameter. We cut these all the time with the bow knife. The widest cuts at the mid zone can be tight, but bread compresses a little, so it works as shown on the video. Also, you can cut the bread into 2 or 4 chunks to make the slices shorter.The blade on this knife is a very thin Stainless-steel material. My other bow knife has a plain carbon steel blade, both work fine. This blade is very sharp, but wobbles more than I'm accustomed to. My immediate impression was it would have a hard time on the crust and perhaps "wander" a little in the cut top to bottom. It does neither. It’s probably the best I've seen on a crust and the slices are very consistent. Be gentle and let the easy back and forth motion and that amazing blade do the work.This is a good knife in terms of form, fit and function. It’s made from good materials and looks great. I love the natural look of the knives and their historic traditional use. It seems to just feel right when cutting homemade breads. Sometimes things from long ago just seem to work. This is so true in the kitchen workshop. So, if you’re looking at a bow knife, this is one to consider. If you make homemade breads, you’ll get an additional smile when you use this type of knife on your loaves.
