Wusthof Gourmet is my favorite line of knives, and I'm very picky

Over the years, I've replaced all my assorted kitchen knives with Wusthof Gourmet.I like them because the bolster is narrow, meaning it's easy to pinch the knife between forefinger and thumb at the base of the blade. There is no heel on this knife either, meaning you can use the full length of the blade for cutting, and it's easier to sharpen and hone. The tang extends all the way to the end of the handle, providing weight and strength. (If you don't know what these terms mean, google: chef's knife anatomy")This is a pressed steel knife, meaning it's lighter weight, and will supposedly not hold an edge as well as forged steel knives. There's an easy solution: Don't abuse your knives. Wash them as soon as you're done using them, and immediately put them away — Don't leave them in the dish drainer. Hone it more-or-less between every use.I like Wusthof Gourmet knives, not just for budget shoppers, but better than any other knife, because of how it feels in my hand.The light weight means I can chop quickly and tirelessly, and the narrow bolster allows me to grip it how I like, pinched between index-finger knuckle and thumb just above the blade, which is impossible with many mid-range or high end knives.

Holds and edge well.

I bought both this the 4" model and both of them are great. I waited a few months to write the review because first I wanted to see how well the hold the factory edge and how well the sharpen up. They held the factory edge as well or better than any knife I've ever used and one of my kitchen knives is a Wüsthof classic knife. A friend of mine has a knife sharpening business and he puts an edge on a knife better than any factory edge I've ever experienced. Anyway it was 2 weeks ago that he touched up all my blades and these 2 are as sharp today as when he worked on them. I use them every day. The only bad thing I can say is if I had bought the 4" knife first, I wouldn't have seen the need to buy the 3.5" one but that's just a use thing not a quality complaint. I have kitchen knives of several brands and one thing I can say for certain, if I worked for Victornox, I'd be worried. These Wüsthof knives are only a little more expensive but way better...
