It easily slices through cheddar, blue, and other hard cheeses.Hand-wash only, use a steel every few uses, and professionally sharpen a couple times a year (depending on use), and this will last you a lifetime.
Works well with soft and hard cheeses. Not sure if this available in the Classic series, but if it is, I feel it may be a bit more durable.
I’m confused about these 5 star reviews on this particular $75 Wüsthof cheese knife. Have you ever owned a Wüsthof knife? The first thing you notice is how light the knife is. Inspecting the knife you realize that it doesn’t even have a full tang but a half one. This blade feels so cheap. Unless I’m wrong and this is secretly made of titanium, I’m sending this back. In this case, you’re paying for the name.
Extremely impressed! This knife cut thick & razor this slices that fell easily away from the blade. Sharp, quick and a great addition to my collection of kitchen knives. I tried it with hard and soft cheeses and it worked so well, I brought the cheese board out to my wife to try it and she agreed. Great price also as it is probably the least expensive knife I own but now a favorite.

Sure glad I didn't read the negative reviews! I have another Wusthof knife I have used for decades. And the genuine quality of my new cheese knife tells me I'll be slicing cheese for years to come. And yes, it DOES cut cheese better than any knife I've ever had!
