Great tool
I have made pinched dumplings/spaetzle/galuskas for years by hand. However, age and injuries have made the process more and more difficult. I'd tried several alternative ways of doing it, but they were not much help or did not result in acceptable dumplings.Our traditional dumplings are a bit larger than the typical spaetzle size, but better too small than too difficult or too large! There ARE some tricks to using this spaetzle maker though, and it doesn't come with one iota of information. I guess it assumes that if you buy it, you know how to use it. For some of us, it isn't that simple though.Use a soft dough. Typically, my recipe is 1 egg for each cup of flour, along with about 1/4 tsp salt for each cup of flour. Use enough water to make a soft, sticky dough. Place the spaetzle maker over your boiling water--it needs a rather large/wide pot. (I have found that a big dumpling eater will eat about 1 c. of flour, while more moderate eaters will be happy with 1/2 c.--hopefully that helps you adjust how much dough to make.)Place about 1/2 c. of dough on top and use the included plastic scraper to scrape it back and forth over the maker, pushing it through to drop into the hot water/broth. Work fast, as the dough will cook without dropping through too! When I get a layer of the accidentally cooked dough on the maker, I simply scrape it all up, chop it roughly, and add it right along with the others by scraping it into the hot water from the scraper.You can cook the dumplings directly into your soup, if desired. If you are serving them separately, cook in boiling salted water or broth. The dumplings are small, so they only need to cook 2-3 minutes at a boil. They can then be scooped out, drained, and tossed with butter in a bowl or casserole dish. They also reheat well, as well as the soups made with them can be frozen or refrigerated for serving again later.This is a LOT faster than doing it by hand. I can make a big batch of dumplings in about 10 minutes, whereas by hand that would be a good hour of work. The learning curve is fairly short when adapting to this maker. I had tried the other kind of maker, the type with a small container that slides over the colander, and that was hopeless. This is super simple and efficient. I would definitely recommend it for anyone who has a family of dumpling lovers!

New to amazon reviews - hope I haven't loaded review twice but this is a great one-tasker kitchen item. Well made, all metal including the handle that is solidly attached to perforated base. Hopper slides smoothly and easily and does great job pushing dough through appropriately sized hole into pot of boiling/simmering water. No problem with handle getting to hot to hold, it does have a rubberized overlay on the metal. Had some doubts about ordering this but very glad I did as it speeds up spaetzle making. Clean up was very easy as hopper completely slides out of base so there are two separate pieces that cleaned up without hassle by hand with soapy water. Have made spaetzle a few times before using two different colanders and a perforated spoon that were on hand with varying degrees of mess and success and for me (and my equipment) this was much easier and quicker.

Works great, but not perfect
I had been using makeshift items to make spaetzle occasionally, so I wanted to get a tool to make it easier. This product does that and I was amazed how easily the batter dropped into the pot and quickly it made spaetzle. However, it comes with some flaws. It would be great 1) if the surface was non-stick. The batter bakes on the surface and will require elbow grease to clean. In fact, if you are making a lot, either have a back up or be prepared to clean in between several loads. 2) Silicone covered handles on the side would also be helpful for removing in between loads to clean. I'm going to try spraying non-stick spray on the surface next time before loading to see if that helps.

Fantastic design works perfectly and will last forever.
Before this purchase, I used one of those rectangular spätzle makers with a sliding square reservoir. I think it was invented by the Spanish Inquisition - pure torture. This unit works flawlessly, producing perfect dumplings. Easy to clean too. I had no issues with the dough cooking on the top. It works so quickly with the included spreader that all the dough is through the holes in less than a minute. I can't comment on the handles getting too hot to hold since I wore one hot mitt to hold a handle down against the pot while scraping with the other. But again, it works so quickly, I doubt the metal would get too hot to touch. Excellent product that will last a lifetime.
